Egg roll in a bowl

EGG ROLL IN A BOWL whaaat. For anyone doing Whole30, this is the perfect recipe for you! If you’re not, but love egg rolls minus the carbs (like ya girl here), then this is also perfect for YOU!

Ingredients (serves 4):
12oz coleslaw or broccoli slaw
1lb ground pork (or beef if you don’t eat pork)
1tbsp grated ginger
1/2 cup diced red onion
1/4 cup diced green onions
1/4 whites from green onions, diced
1 tbsp minced garlic
2tbsp sesame oil 
1 tbsp rice wine vinegar
3 tbsp coconut aminos OR soy sauce
3 sriracha (or hot sauce of choice)
1/4 cup mayo (whole30 compliant if necessary)

Instructions:
Heat sesame oil on medium. Once hot, add onion whites, diced red onion and garlic to pan. Cook until red onion starts to look translucent. Add in 2tbsp hot sauce, grated ginger and ground meat. Cook meat through (approx 8 mins), then add in slaw, rice wine vinegar and soy sauce. Once the slaw starts to soften and translucent remove from eat, and serve topped with diced green onions and spicy mayo. •
While the meat is cooking, whip up spicy mayo (mayo and 1tbsp sriracha), and add to a small ziplock bag. When ready to serve, cut the corner tip off one bottom side for piping.
