Easy Summer Ceviche

Ceviche in the summer is one of my favorite things to make AND eat. It’s so easy, and such a refreshing dish with the citrus flavor from the lime juice. I had some friends over a couple of weeks ago, and I paired it with guacamole topped tostadas with a side Mexican rice and black beans. Such a fun and easy dinner!!

Ingredients (serves 2):

  • 2/3 lb cocktail shrimp (I use this because it’s easiest!)
  • 2 roma tomatoes
  • 1 jalapeno
  • 1/2 c. diced onion (can use red or white)
  • 1/2 c. chopped cilantro
  • juice from 1 lime
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt

Dice all the ingredients (individually) and mix together. Toss with garlic & onion powder, salt and lime juice. You can eat it straight away, and whatever is leftover will still be good the next day.
