Fajita steak wrapped asparagus

Fajita steak wrapped asparagus. YUM! This is one of my fave 30 minute weeknight meals, and it’s perfect for a low carb/high protein diet.

Ingredients (serves 2):
1lb flank steak 
18 asparagus spears
2 tbsp olive oil 
3 tbsp Worcestershire sauce
3 tbsp fajita seasoning
Juice from 1/2 lemon
Salt & pepper to taste
Sauce ingredients:
1c. Sour cream or Greek yogurt
Juice from 1/2 lemon
Salt & pepper to taste

At a minimum of 4 hours before cooktime, pound the steak out to 1/4 in thickness, slice the steak in to 2 inch strips, and marinate with the olive oil, Worcestershire sauce and fajita seasoning. Can be marinated overnight as well. 
Heat 1 tbsp olive oil in a grill pan over medium high heat. Add the asparagus to the pan, top with salt and pepper, and cook for 3-4 minutes then set aside to cool. Prepare the sauce by mixing all ingredients together in a bowl. 
Once the asparagus has cooled (approximately 5 mins), wrap 3 spears with a steak strip and secure using a toothpick. Cook each roll up for 3-4 minutes per side and serve!
