Roasted Broccoli Buddha Bowl

If you’re like I once was and wondering who on earth this is called a “Buddha Bowl” I am here to help. No it’s not named after Buddha himself, but more so after Buddha’s Diet which focuses on mindful eating. I think the bowl part may have come from some witty genius out there who thought “hey this is kind of how Buddha ate, and he used to eat out of a bowl so let’s call this Buddha Bowl.” That witty genius is not me, unfortunately.

I love a good *meatless Monday* meal. Obvs I know today is not Monday, but because I’m playing catchup this isn’t posted on the day I cooked so just pretend 🙂

If you look online there are soooo many different ways you can make a Buddha bowl, but this roasted broccoli one is my absolute fave. PSA: roasted broccoli is delish, but it makes your house smell like toots such just beware that you need to open a window and/or burn some candles while you cook.

Ingredients (Serves 2):

  • 1 c. cooked brown rice
  • 2 c. broccoli
  • 1/2 c. black beans
  • 2 diced roma tomatos
  • 1 diced avocado
  • 4 tbsp red salsa
  • 4 tbsp olive oil
  • salt and pepper to taste

Instructions:

  1. Cook rice according to the instructions on the package.
  2. Heat oven to 400 F.
  3. Toss broccoli in olive oil, lay out on cookie sheet and season with salt and pepper. Cook for 15-20 mins (should be browning and slightly wilted when done)
  4. While broccoli cooks, dice up tomato and avocado. Toss the beans in the salsa and cook for 1-2 minutes.
  5. Once the broccoli is done, assemble your bowl and serve!

This is such a delicious meal, makes even better leftovers and is SO filling! Enjoy 🙂
