Spinach Penne Salad

This is one of my all time favorite salads, and I wish I could say I made it up. But I didn’t. I ripped it right off the old Cafe Express menu LOL. They don’t sell it anymore, so I’m glad that I learned how to make it myself before they did that!!


As always, I’ll list the ingredients for 1 person so you can easily multiply to feed a crowd 🙂


Ingredients (serves 1):

  • 1 cup spinach
  • 1/2 red potato
  • 1oz whole grain penne
  • 1 oz kalmatta olives
  • 1/8 c. sliced red onion
  • 5-6 cherry tomatoes, halved
  • 2-3 slices crumbled bacon OR 1/8 c. real bacon bits
  • 1 oz EVOO
  • juice from 1/2 large lemon
  • 1 TBSP dijon mustard
  • salt to taste

Cook the bacon to a crispy status… status? Is that the right word? LOL… you know what I mean. While it cooks dice the potato up into small cubes (approximately 1.4 in in thickness). Bring water to a boil in a medium sauce pan, and then add the penne and potato. Cook for 9 minutes for al dente. Drain the bacon and crumble in to small pieces. While the pasta/potato mixture cooks, prepare the lemon vinaigrette by mixing together the EVOO, mustard, lemon juice and salt. Set aside. Dice tomatoes and slice the onion. Once the penne and potato are done cooking, drain the water, then mix together with spinach, tomatoes, bacon, and olives. Toss with the vinaigrette.

See how easy that is?? This is a salad I find myself making all year round. It’s so yummy!
